Sausage Bake
The beauty of this recipe is it can be prepared in advance, kept in the fridge then put in the oven to cook ready for everyone to come home. You can even get ahead and if you have pasta for dinner the night before, cook extra for this dish - now that's planning!
2 cups penne pasta
5 sausages (beef and mustard are good)
540-gram jar tomato pasta sauce
1 cup frozen peas or corn
1 cup grated cheese
2 tablespoons fresh basil
Preheat the oven to 180ºC. Cook the pasta in boiling salted water until tender. Drain and place in a lightly greased ovenproof baking dish.
Brown the sausages in a pan with a little oil until lightly golden. Cool slightly and then cut into bite-sized pieces. Add the sausages to the pasta along with the pasta sauce, frozen peas or corn and toss lightly. Sprinkle with the cheese and bake for 25 minutes until golden brown.
Serve sprinkled with fresh basil leaves.
